One of the most delicious and healthiest recipes, these vegetables a gratin with cashew sauce can be cooked very fast, being perfect especially for lunch. It contains two cruciferous vegetables, cauliflower and broccoli, which are very beneficial for our health. Besides, for even more taste, opt for roasted cauliflower and roasted broccoli and enjoy them with a delicious sauce made from cashew, avocado and garlic. How all these are prepared? See below!



Vegetables au gratin and cashew sauce – what ingredients do you need

I never use more than 3 vegetables, more often cauliflower, broccoli and carrot. For the sauce, as I have told you before, you need three ingredients, but sometimes I skip garlic or put just a little bit as I don’t tolerate it very well. And, of course, the secret of this dish is to roast cauliflower and broccoli after you boil them a little. Below, the whole recipe of these roasted cauliflower and broccoli with cashew sauce.

So, you will need:

✔️ ½ medium cauliflower
✔️ ½ medium broccoli
✔️ 1-2 small carrots

For the cashew sauce

✔️ 100 g cashew to soak at least 2 hours
✔️ 1 clove of garlic
✔️ 1 smashed avocado
✔️ lemon juice
✔️ salt, pepper

Directions:

👉🏽 Wash the cauliflower and broccoli.
👉🏽 Put water to boil and when it reached the boiling point add the cauliflower and broccoli.
👉🏽 Leave it for 7-8 minutes (try them with a fork). They have to be tender, but not very tender.
👉🏽 Leave aside and then boil the carrot. I think the carrot will take longer to be soft.
👉🏽 Then, chop into small bouquets the cauliflower and broccoli and slice the carrots.
👉🏽 Add in a pan 1-2 teaspoons of olive oil for frying or another vegetable oil you use to fry and sauté them a little bit. Roasted cauliflower and roasted broccoli give the dish a special flavour.
👉🏽 In the meantime, do the cashew sauce adding all the ingredients in a blender.
👉🏽 Serve the sauteed vegetables with this sauce.
