Spinach Food with Fried Shrimps

This combination of spinach food with fried shrimps may sound a little bit unusual, but it is very tasty and easy to do. I cooked it the other day when I wanted something delicious, healthy and different from what I had lately.

➡️ You can enjoy spinach food by itself, with shrimps or in other combination

It is not a must to “pair” this dish of food spinach with shrimps. This was what I found in the supermarket, but this food is great by itself, or in a simpler combination, such as with cashews or pickles. As I don’t eat gluten, I eat spinach food with polenta, a great gluten free replacement, made from cornmeal. Here you can find the recipe.

➡️ Spinach Food with Fried Shrimps – what ingredients do you need

20-30 shrimps
1-2 small boxes of baby spinach
½ green bell pepper
½ yellow bell pepper
½ red bell pepper
1 big carrot: half grated, half cut into small cubes
2-3 small tomatoes
lemon juice
salt, pepper
olive oil

➡️ Directions

First, take the shell out of the shrimps (if they are not already cleaned) wash them, put in a bowl and add 1-2 tablespoons of lemon juice, 1 teaspoon of olive oil and 1 clove of garlic, chopped. I do not tolerate garlic very well so I added only half of it. Mix them up and then put in the fridge till the spinach food is ready.

Then, start to cook the spinach: wash the spinach in 2-3 waters and leave it in a bowl with water where you put ½ teaspoon of salt.

Then, cut all the vegetables (carrot, bell peppers, onion and garlic only of you want and tolerate them) into cubes, stripes or as you wish and cook them a little in 1 tablespoon of olive oil and 1 small cup of cold water.  

Cover it and then go to the spinach, wash it very well again, chopped it and add over the vegetables. Cover, mix from time to time and let it like this till all is almost ready.

Then, wash the tomatoes, unpeel, slice or cut into cubes and add them over the other vegetables and spinach. Add salt, pepper, mix a little and let them cook for 5-7 more minutes. Then, turn off the heat and leave aside.

Take out the shrimps from the fridge. In a pan, add 2 tablespoons of olive oil, turn on the heat, leave it like this for 1 minute and then add here the shrimps. I also add here that mixture where they stood to become juicier - the mixture made from lemon juice, olive oil and garlic.

Leave them like this till they are light brown on each side and then serve with the food spinach and polenta.

This was great, delicious and not so fancy, but the result was indeed “Instagramable”. The next day I didn’t have shrimps anymore, only spinach food, but I enjoyed it simple, with polenta and some cashews, as you can see in the photo.
