One of the recipes always reminds me of childhood is rice with milk. Even if, for some years, I have been trying to avoid dairies (and I haven’t eaten milk or goat milk for 5 years), I still cook this “childhood recipe”, of course, adapted to my diet. Below you will find my recipe of rice with coconut milk, a delicious and healthy dessert.
Why I do prefer coconut milk? How to choose the best brand?
There are a lot of vegetal milks on the market but still, you have to pay attention when choosing the best brand. First of all, I should tell you I prefer coconut milk because I found it to be the “cleanest” in additives and the taste is the lightest and most versatile. Of course, it depends on the brand, but still.
Then, you always have to read the label before purchasing a coconut milk. Some of the product brands are “cleaner” than others, but I always prefer a product of coconut milk that does not have sugar.
Rice with coconut milk – what ingredients do you need?
1 cup of white rice
4 cups of liquid: 3 of water and 1 of coconut milk
lemon and orange zest
natural sweetener: stevia extract, agave syrup etc.
Wash the white rice in 2-3 waters and leave it aside in a cup.
In a pot, put 3 cups of water. When water reaches the boiling point, add in the rice. Stir in a little, till you see the texture is different and the rice is almost tender.
Then, add in the cup of coconut milk. Mix it well and after a short while you will see the rice is cooked.
We don’t add milk in the first place because rice is not boiling so fast with milk. Besides, the milk is just for an added flavour. Of course, if you want to put 1, 2, 3 or even 4 cups of coconut milk, you can do that, but pay attention that the rice is going to boil harder. I most often do it this way: 3 cups of water, 1 cup of coconut milk or 2 cups of water, 2 cups of coconut milk.
Mix it well and after you take the pot off the fire (the rice should be ready in 30 minutes maximum), you can add condiments for flavour, like lemon and orange zest. It is important to add these after you close the fire because, otherwise, the rice will have a bitter taste.
Leave it a little bit and then sweeten it with what you want: stevia extract, agave syrup etc. If you will use a sweeter jam or if your coconut milk is already sweet, you might skip this step.
