Coconut Vegan Balls with Sour Cherries

Ever since I started this gluten, dairy, sugar, soy free diet, I realized finding and preparing desserts being the hardest thing. It’s true I am not a fan of cakes or chocolate, but still, from time to time, you need something sweet. Below you will find one of my easiest and tastiest recipes: coconut balls with sour cherries inside.

Coconut Vegan Balls With Sour Cherries – what ingredients do you need?

I said it could be vegan because you can replace honey (it’s still very hard for me to cut off honey, but I am trying) with agave syrup or maple syrup or better, to add dates which will give a natural sweet taste to this dessert.

As I often tell you in my recipes, the ingredients are what I chose for this sweet treat, but you can “play” a little with them and also with the quantities. For example, I would have added almond butter in them but I didn’t have at that time in the house. I wrote down quantities too, but keep in mind you can adjust depending on the consistency and texture of your mixture.

Ingredients:

1 cup almond or oats flour
2-3 tablespoons carob powder or cocoa powder
50 ml coconut milk
2 tablespoons of coconut oil + coconut oil for shaping the balls
natural sweetener as you like
some dates soaked in water for about 30 minutes (if you use dates, you might not need sweetener)
ground walnuts
ground coconut/coconut flakes
sour cherries (fresh or from compote)

Directions

Place the almond flour, carob powder, milk, dates, coconut oil and some ground walnuts in the blender.

Mix it well till the mixture can be shaped into little “candies”.

Now you might want to adjust: if the texture is too soft, add ground walnuts or more flour. If it is too hard, add coconut milk.

Take out the mixture in a bowl. Add here 2 tablespoons of ground walnuts and mix.

When the texture “can be shaped”, place some coconut oil on your hands, put in the middle a sour cherry and form the little balls.

Roll them through ground walnuts and then through coconut flakes.

You might want to leave it just for 10 minutes in the fridge, but it is not mandatory.
