Brown Rice Pasta with Smoked Salmon and Cashew Cream

I am more into simple, traditional dishes, but from time to time I like to play with ingredients, to adapt recipes I saw on Instagram and see how the result is. This is what I did the other day and I was delighted by the final dish. That’s why, I am presenting to you one of my tastiest food ever: brown rice pasta with smoked salmon and cashew sauce.

This dish could also have a “vegetarian version"

If you don’t eat fish, then you can skip this ingredient from the list. Just follow all the other steps and the result is going to be great as well. I wanted it with smoked salmon because I felt the need of a more consistent food. The day before this dish I had cooked a potato and vegetable stew so I wanted something different, with fish too.

Brown Rice Pasta with Smoked Salmon and Cashew Sauce – what ingredients do you need

½ package of brown rice pasta or any other gluten free pasta

smoked salmon

2-3 tomatoes

about 1/2 cup cashews (mine were roasted and salted but you can use raw cashews too)

1/2 clove of garlic

salt, pepper

1 box of baby spinach

olive oil


Wash, unpeel, cut into cubes the tomatoes and cooked them in a little bit of olive oil with chopped garlic.

Then, mix in a blender the tomatoes with the cashews and leave aside. Previously, put the cashew to soak (I soaked them no more than 15 minutes).

Put a pot with water to boil and, when it reaches the boiling point; add the spinach, previously washed. Leave it to boil for several minutes, not too much, drain, and then chop the spinach. 

Boil the pasta - mine boiled a little bit harder as it was from brown rice.

When all these are ready, put in a larger bowl the pasta, add the spinach, mix it a little, then add the cashew sauce, salt and pepper, mix it well and, if you want you can also add some chopped cashew too for the dish to be more crunchy.  In the end, add over all these the smoked salmon pieces.

This was my brown rice pasta with smoked salmon and cashew sauce recipe. As I have told you, you can do this dish without the smoked salmon and even without spinach, it will be tasty too. Of course, on this combination, the result was amazing.

The quantity of ingredients is enough for about 2 meals.
