Baked Cauliflower with "Vegetarian Tzatziki" Salad

This is one of my best vegetarian foods. I like to cook it when friends come over so I want a special, delicious, but also a healthy dish. My baked cauliflower with vegetarian tzatziki salad has some secrets I will reveal to you below.

A recipe that reminds me of Greece

I am in love with the Greek islands and there I ate for tzatziki salad for the first time. Yet, that salad is made with cow yoghurt which I try to avoid, but I have found a great replacement for it.

Besides, Greeks eat tzatziki with pitas, a form of bread which is very good, but, as I try to avoid gluten too I replace breat with gluten free crackers or potato chips.

Baked Cauliflower with vegetarian tzatziki salad – what ingredients do you need?

For the baked cauliflower – Ingredients

1 cauliflower
2 tablespoons of olive oil
1 teaspoon curry
1 tablespoon of lemon juice
1 pinch of salt (or a little bit more if you like more salty)
1 pinch of paprika
1 pinch of pepper

For the vegetarian tzatziki salad – Ingredients

5 small cucumbers
1 -2 cloves of garlic
juice from 1/2 lemon
1 vegan yoghurt (I often use cashew or coconut yoghurt)
2 tablespoons of olive oil
salt
pepper
dill, finely chopped.

Directions

Wash the cauliflower, and cut out the leaves and the stem.
Cut the cauliflower into small bouquets.
Wash and dry them well.
In a bowl, mix the olive oil and all the other ingredients: the curry, lemon juice, salt, pepper, paprika.
Add the cauliflower bouquets into this sauce.
Line a tray with baking paper and add the cauliflower bouquets.
Bake till they are golden brown, and, after 10-15 minutes, make sure to turn them around to bake uniformly.

Serve them with tzatziki Greek salad.

For it, you need 5 small cucumbers, 1-2 cloves of garlic, juice from 1/2 lemon, 1 vegan yoghurt (I often use cashew or coconut yoghurt), 2 tablespoons of olive oil, salt, pepper and dill, finely chopped.

The only thing you need to do is to wash the cucumbers, to peel them and to cut them into small cubes.

Finely chop the garlic and crush it a little bit, then mix it with the olive oil, lemon juice, salt and pepper.

Add the vegan yoghurt, the cucumbers and the dill and mix again till everything becomes smooth.

The baked cauliflower is delicious and, with this tzatziki sauce, becomes spectacular.

As I said above, you can enjoy them with gluten free crackers, gluten free bread, potato chips but also “veggie sticks”.

Besides, let's not forget this is a recipe suitable also for the ones who have a gluten free, dairy free, sugar free, soy free and vegetarian diet.
